Jumeirah Carlton Tower unveils new fusion afternoon tea by Eric Lanlard

Eric Lanlard, master pâtissier and star of Channel 4’s Baking Mad series, has launched a new fusion afternoon tea menu at London’s Jumeirah Carlton Tower.

The menu is inspired by Lanlard’s travels and his discovery of unusual and unexpected flavour combinations. Working closely with chef Simon Young, Lanlard has aimed to deliver a refreshing twist on the afternoon tea concept.
 
On arrival, guests are spritzed with edible perfume of freshly baked pain d’épices – quite literally a taste of things to come and a novel way to bring out the flavours of the tea. The menu begins with a section of savoury creations such as salmon marinated in lemongrass and ginger with a pumpernickel roulade; a roast beef, watercress and creamed horseradish wrap; and an onion brioche with crispy Peking duck, spring onion and cucumber.
 
The dessert menu, featuring a selection of pastries, cakes and other treats, is sure to satisfy those with a sweet tooth. From a wild strawberry cone pop topped with strawberry cheesecake popcorn to dark chocolate cannelloni filled with tarte tatin mousse topped with pecan-smoked mini apple, the fusion afternoon tea is a decadent experience. Landlard fills his honey roast apricot tart with saffron mousseline cream, and tops his wild roses nectar and fresh raspberries with lychee pearls and a Provençal fig coulis.
 
“Travel is my biggest source of inspiration,” said Landlard. “The discovery of new ingredients, techniques, cultures and traditions – that is what my baking is all about; a fusion of flavour from around the world, exciting textures and extreme presentation. I am delighted to once again work with Simon Young and his team to deliver a truly unique and indulgent afternoon tea experience.”
 
Fusion Afternoon Tea by Eric Lanlard is available now in the Chinoiserie at the Jumeirah Carlton Tower, priced at £40 per person or £50 per person with a glass of champagne.
